Krumplovník

Krumplovník

Village feast, organized in the late September by members of the municipal council in cooperation with the Mayor, volunteers and sponsors. This tradition began in 2005 with a thought to preserve traditions in Hiadeľ.


Main dish during the feast is „Krumplovník"- Hiadeľ delicacy made from shredded potatoes mixed with flour, salt, cumin and a little milk. Krumplovník is being baked during the feast by the most skilled women and men living in Hiadeľ so it´s warm and delicious when visitors buy it at the stands. At the same time in the community house, there is held a competition for the best Krumplovník , that anyone can participate in. The winner is then declared on the main stage by an expert jury set up for this purpose and can receive some amazing prizes.


Accompanying program takes place on the main stage during the day and it´s full of interesting performances by various folk groups, games and competitions that anyone (even children) can participate in and the main performance by a special guest (popular Slovak singer or band) in the evening.

Recipe:

  • 8 large potatoes
  • 1 whole egg
  • 1 tsp of salt
  • a pinch of cumin
  • 3 tbsp coarse flour
  • 3 tbsp fine flour       (or 6 tbsp all-purpose flour)

Peel the potatoes and shred them using a fine food grater (resultant shreds should be quite thick so use medium or large holes on your shredder). Coat your baking sheet with grease or butter. Mix all the ingredients and spread them evenly on the baking sheet (about 1/2-inch or 1 cm). Bake in pre-heated oven at 180°C/350F until the edges are golden and crispy. You can also add one more coat of butter or oil on the whole thing during baking, when it just starts to golden so it´s even more crispy and delicious. 

This is just a basic recipe for Krumplovník, but you can add anything that you like to it. Some of the most used additional ingredients are bacon, greaves, egg or even sauerkraut. But it is very good even without those. So good luck with baking and enjoy Hiadeľ specialty – Krumplovník.
